Since we prepare everything for you, we only ship the top shell on Wednesdays and Thursdays.As upper shell is the name given to the muscle meat from the inside of the thigh. It is part of the ham, i.e. the rear leg of our Duroc pigs. Alongside the fillet, the topside is considered one of the finest cuts of the pig, as it consists of very lean, tender and short-fibered meat.
Our Duroc straw-fed pork topside is easy to prepare and versatile. It can be grilled whole or sliced, or roasted in the oven. The fine layer of fat and tendons makes the meat juicy during preparation and retains its intense flavor.
The meat is most commonly used for schnitzel or veal strips, but it can also be braised as a juicy and aromatic roast or cut into cubes to make a spicy goulash.
However, various types of ham, such as cooked ham or hind ham, are also made from the topside.
